cereals are grains which are
cultivated for edible purpose and fruit seeds of these crops are widely used
for cooking. Each seed consist of endosperm, germ and bran and is considered as
a staple crop of grass family. Cereals are an important source of proteins,
carbohydrates, fibers, energy etc. The most widely used cereal crops include
rice and wheat. Other commonly used cereals include maize, barley, oats, rye,
millet, sorghum, triticale etc. Each and every cereals have its own properties
and hence is widely used for making a variety of products. Grains in its
natural form is called whole grain which consist of carbohydrates, minerals,
vitamins, oils, starch and protein. But when these grains are refines it will
remove the germ and barn and leave the endosperm which contains mostly
carbohydrates and lacks many of the nutrients. For example brown rice when
refined gives to white rice which is a refined carbohydrate.
